Simple banana muffins made by Room For Dessert on YouTube
Ingredients:
Dry
- 1 Cup /120G AP Flour
- 3/4 Tsp Baking Powder (Ignore the video, it’s teaspoon not tablespoon)
- 1/4 Tsp Baking Soda
- 1/4 Tsp Salt
Wet
- 1-2 Ripe Bananas (100G-200G)
- 2 Tbsp / 30mL Vegetable Oil
- 2Tbsp / 30G Melted Unsalted Butter
- 1/4 Cup / 50G Brown Sugar
- 1/4 Cup / 50G Sugar
- 2 Tbsp / 30mL Buttermilk (Room Temperature)
- 1/2 Tbsp Vanilla Extract
- 1 Large Egg
Topping
- 2 Tbsp / 25G Sugar
While trying this out, I did three things differently from the recipe.
- I didn’t have any buttermilk, so I tried to make a substitution for it. I added 1 tbsp of vinegar to 1 cup of warm milk and let it sit out on the counter until it curdled. There are different variations of this such as lemon juice and milk.
- I didn’t see the corrected measurement for the baking powder in the description, so I used 3/4 tablespoons instead of teaspoons. This could have affected how my muffins rose in the oven, but they turned out fine overall and tasted good.
- I forgot to sprinkle the sugar on top before baking
